I know I've failed miserably at keeping this up but I think you all understand why! Just so you know, our little man is growing fast & is now 7 lbs 3 oz & is 20 inches long! YAY!!
This is 1 of my new favorites! The leftovers were amazing & I'm sure we will make this again soon!
Thai-Style Grilled Chicken
1/2 cup white vinegar
1/3 cup sugar
1/4 teaspoon red pepper flakes
1/2 cup chopped cilantro
2 tablespoons fish sauce(we used oyster sauce)
1 tablespoon grated fresh ginger
3 garlic cloves minced
4 boneless, skinless chicken breasts(about 1 1/2 pounds)
2 tablespoons vegetable oil
2 cups white rice
4 cups water
1. Heat vinegar, sugar & pepper flakes in saucepan over medium-high heat until sugar dissolves, about 1 minute. Off heat, stir in cilantro, fish sauce, ginger & garlic. Meanwhile, cook 2 cups rice in 4 cups of water until rice is cooked through, approximately 25-30 minutes.
2. Pat chicken dry with paper towels, rub with oil, and season with salt & pepper. Grill over hot fire until browned & cooked through, about 5 minutes per side. Transfer to platter & brush with 1/4 cup sauce. Tent with foil & let rest 5 minutes. Serve over white rice.
